Around the House

Hey there and happy Monday.  I, for one, am so happy to have a new and fresh start.  Last week was a trying one on many levels and so I certainly viewed today as a new beginning of sorts.  Praying for a smoother week!

This blog post title really should be A Picture of My Dog and Two Delicious Foods, because that’s all I’ve got for you today.  😉  Nothing in the way of home decor inspiration — it is safe to say that I’ve had blinders on for the past seven to eight days and have not been living with the ability to see much that inspires me.  BUT, let’s change that this week, okay?  I’m going to give it my all.

My loving furry companion never fails me and he has been spending so much time by my side, making me feel better.  Same with my non-furry love, my husband, who’s been making sure that I feel well taken care of.  These boys are the best.

This epic salad is one of my favorite meals lately — I’ve had it countless times.  It’s a chicken caesar salad with shaved parmesan cheese; but the dressing is from Target and is a yogurt-based caesar so it cuts the calories more than in half.  I make up for it with the cheese, though, lol.  😉  One of the biggest salad tips I can give you is to salt and pepper throughout the assembling process much like you would any other meal that you make.  It adds just another layer to the flavor and really elevates the experience, even with storebought dressing.

A fabulous lunch-time snack that I am loving — crusty bread that has been toasted to perfection, pesto, burrata, and smoked salmon.  Honestly, this is my favorite thing right now.  The kind of meal that you eat and then can’t wait to have again the next day.
